Chef Stone's approach to plating draws from African visual traditions: bold colours, organic shapes, and a sense of abundance that honours the ingredients rather than minimising them.
Principles of Plating at The Burgundy
Intentionality Over Complexity: A plate does not need twenty components to be beautiful. Sometimes the most striking presentation is a single element, perfectly placed. Our egusi course — an emulsified melon seed soup — arrives as a pool of gold with three confit prawns and a scatter of crushed peanuts. Simple. Stunning.
Colour from Nature: We never use artificial colours. Every hue on the plate comes from the ingredient itself: the deep purple of hibiscus reduction, the vibrant orange of palm oil, the emerald green of fresh herbs, the rich brown of cocoa tuile.
Texture as Visual Language: Smooth against rough. Glossy against matte. A silky chocolate tart topped with a shattered cocoa tuile creates visual tension that makes the guest lean in.
The African Aesthetic: African art is characterised by boldness, rhythm, and storytelling. Our plating reflects this — we do not subscribe to the sparse, minimalist European tradition. Our plates are generous, warm, and alive.
The Role of Ceramics
Every plate, bowl, and vessel at The Burgundy has been chosen to complement the food it carries. We work with ceramic artists who understand that the plate is not separate from the dish — it is part of it. Dark, textured plates make golden sauces glow. Shallow bowls allow soups to pool into perfect circles.
From Kitchen to Table
In our kitchen, Executive Chef Denike oversees the final plating of every dish. Each plate is checked against the standard before it leaves the pass. With 70 guests nightly, this means hundreds of plates must meet the same exacting standard — a feat of precision and teamwork.
